Every time I've been to Azurmendi, it's been a journey. The three Michelin-starred restaurant is situated half way up a very steep hill, about 15 minutes drive from Bilbao. In the evenings, almost every inch of the palatial structure is lit up like a glittering crystal; and as you drive up the winding road to reach the restaurant, it illuminates the darkness like a beacon.

Maybe the best front-of-the-telly snack idea I’ve come across this Christmas: French fries with caviar and crème fraiche dip @bebebob. Which of course makes it spendy for a snack but you could pull the same trick with lumpfish roe. The schnitzel would be a bit more of a hassle to make at home but it was very very good. Add a glass (or two) of champagne and the top notch company of @thaneeprince and you have the perfect Christmas lunch. Also an utterly dreamy plate of ricotta and cavolo nero agnolotti with pumpkin and sage butter under a billowy cloud of parmesan. (The pasta is always worth ordering but enough for two if you have other dishes so I’d share.) Like a mature grand cru Chablis.
